This variety of corn is used for cornbread, grits,and breading. It could also be used to make fresh tortillas. Many gears of work went into this variety of corn between Kevin Bane and Nathaniel Martin who is a Mennonite. 80% of the ears have a nice dark purple color to them that will stain your fingers. The other 20% will be yellow white red or anything in between. This was created using Peruvian Purple (aka Maize Morado) crossed to Hopi Blue. Many other types of corn were crossed in and out of it. This corn has a trait known as aerial roots which allow it to sequester nitrogen from the air and provide its own nitrogen fertilizer. This is a rare trait of corn from S America that is being adapted to North America for hobby growers.
